Bacon Wrapped Asparagus Recipe – I do love asparagus and this is gluten free! Add in a little Gruyere to make it more scrumptious.
I had some leftover bacon and a whole pound of asparagus, and since puff pastry is probably just as bad for you as bacon, (if not worse), I decided to deconstruct my puff pastry with gruyere and asparagus recipe and make this bacon wrapped asparagus recipe instead.
And it was delicious. Bacon wrapped asparagus for the win.
Not that it would have been bad with just the bacon and asparagus but I know the addition of the other ingredients only made it better.
I do love asparagus. Although I do think I should start bringing scissors to the grocery store so I can snip off the tough ends right there and then and avoid having to pay for the parts I won’t be eating anyway. But then again armed with scissors I might be tempted to cut off only the asparagus tips – since that’s really the best part – I highly doubt the grocery store employees would appreciate that though. Right? Tell me you also love the asparagus tips too? It can’t just be me. I mean I would love a whole plateful of just the asparagus tips – that would be quite nice!
But until this I’ve got the whole asparagus spears to deal with and so to make them even more delicious than they are we’ve got this bacon wrapped asparagus here for you today. I also added some mustard and gruyere to the inside of the bacon when wrapping up the asparagus spears for extra flavor and taste! I mean whole grain Dijon mustard is currently a serious obsession of mine – like I literally cannot get enough and need it on pretty much everything – from eggs, to turkey cold cuts to these bacon wrapped asparagus spears. And gruyere is the king of all melted cheese if you ask me! Though this recipe could easily be made dairy free by using a vegan shredded cheese blend instead. I’ll leave that part up to you!

A sophisticated yet simple appetizer - bacon wrapped asparagus
- 1 pound asparagus trimmed
- 1/2 pound bacon
- 1 tablespoon parsley chopped
- 4 cloves garlic minced
- 1 tablespoon whole drain Dijon mustard
- 1/4 pound gruyere grated

Directions:

Preheat oven to 400 degrees. Mix parsley, gruyere, garlic and mustard until combined.

Spread mix evenly on each slice of bacon. Place 4-5 asparagus stalks in the center of each bacon slice and wrap the bacon around the asparagus bundles.

Place bundles on lightly greased baking sheet and bake 20-25 minutes, until bacon is cooked through and looks slightly crispy.

This sounds very tasty ๐ I assume it’s 1/4 pound of gruyere?
We do something less fancy, which uses sliced ham (or sometimes prosciutto if we have thin young asparagus on hand, which cooks quickly) and sliced cheese draped over the bundles with the mustard inside. I’d like to try it this way, though.
If you buy asparagus at a farmer’s market, it may be so fresh that it doesn’t need to be trimmed, but how long you can do that depends heavily on where you live. (Here it’s a pretty long time! Other places it’s just 3 weeks or so.)

Thanks for picking up on the mistake in the recipe. It should say 1/4 pound. Your way sounds delicious too! Will have to try this with sliced ham next time!
